- chickpea cutlets, mustard sauce, sauteed greens, baked potatoes
- pasta night: garlic pine nut sundried tomato spaghetti
- roasted cauliflower soba lentil tahini bowl
- taco night with chile-beer tempeh
- Creole hoppin' jean with hot sauce and guac and chips
This week:
- chilaquiles and tortilla soup
- pozole rojo
- corn chowder with basil, baked zucchini chips
- sweet potato, squash, and black bean enchiladas
- probably a pasta night and a taco night...
I borrowed the cookbook Thug Kitchen from the library, and am trying out a bunch of recipes this week. I'm also going to try out a cake, a waffle, and a brown rice bowl with edamame breakfast recipe.
