Tiffanie: this week's menu

Ugh, three weeks not recorded! Here they are!

Two weeks back:

  • curried peanut sauce bowl with tofu and kale, rice
  • massur dal and carrot soup, bread
  • lentils with spinach and sausage
  • potato salad with green and white beans, summer corn fritters, melon slushies
  • English jacket potatoes
  • roasted eggplant and pepper spread
Last week:
  • pineapple fried rice
  • chickpea cutlets, mustard sauce, sauteed greens, baked potatoes
  • pasta night: garlic pine nut sundried tomato spaghetti
  • roasted cauliflower soba lentil tahini bowl
  • taco night with chile-beer tempeh
  • Creole hoppin' jean with hot sauce and guac and chips
This week:
  • chilaquiles and tortilla soup
  • pozole rojo
  • corn chowder with basil, baked zucchini chips
  • sweet potato, squash, and black bean enchiladas
  • probably a pasta night and a taco night...
I borrowed the cookbook Thug Kitchen from the library, and am trying out a bunch of recipes this week. I'm also going to try out a cake, a waffle, and a brown rice bowl with edamame breakfast recipe.
