Tiffanie: this week's menu

It's spring weather, all cool and possibly sprinkly? Makes me want soup!

My plans include:

  • mushroom barley soup, with no-knead bread
  • snobby joes (i.e. lentil based), salad
  • pasta night: slurpy spicy tomato sauce, with olives and capers, salad
  • mole skillet pie
  • lentils and rice with caramelized onions and spiced pita crisps, slaw

The plans this week include:

  • white beans and escarole, baguette, fried zucchini slices, Field Roast sausage
  • bok choy, chickpea, and cashew saute. Jasmine rice. Roasted sweet potatoes and baby turnips. Baked tofu. Seaweed.
  • cauliflower tahini bowl with soba noodles and lentils
  • brown curry with all the veggies and tofu, rice, salad.
  • baked potatoes with chili, salad
  • no-bake energy balls
  • muesli

My plans this week include:

  • sesame crusted tofu with garlicky spinach, jasmine rice, roasted sweet potatoes
  • chickpea cutlets with mustard caper sauce, mashed potatoes, green salad
  • broccoli tofu stir fry (again; the kids like this one)
  • pasta night: eggplant with bread crumbs and spicy tomato sauce
  • massur dal and carrot soup, homemade bread
